May 13:  Raw, Vegan Cookie Dough Balls

– 1 cup unsalted nut butter (such as almond butter, peanut butter). Pour out some of the oil if it has separated.  SunButter is a great alternative for those with nut allergies.

– 1/4 cup coconut flour or unsweetened shredded coconut

– 1 tablespoon maple syrup or honey

– additional nuts, sunflower seeds, or chocolate chips (the amount is up to you!)

– Add the almond butter & coconut flour into a large mixing bowl and mix with a fork.

– Once well mixed, mix in your maple syrup/honey and any chocolate chips or nuts.

– After you’ve mixed everything thoroughly, wet your fingertips a bit with water and roll the balls in the palm of your hand.

– Chill your balls in the fridge for at least an hour, for best consistency.

– Share & enjoy!
